those double sided f-dick steels are good! run your knife on the smooth untill it gets dull and then bring it back on the rough. keeps your knife running a few days, so you can do more important things like playing cards for fish 'n' chips.

have you tried boning on a running chain, as i'm guessing you bone on a dead rail. a lot of walking but heaps easier as the chain helps pull the cuts off for you.

I have used both before.The chain is faster if you can keep up.
But then I never had a problem with speed.
I use Forschner knives and steels exclusively .

i don't work as a boner anymore, but worked in 5 different works. most of the work i've done was exported around the world... America, China, Japan etc. i have done some supermaket stuff which may be similar cuts to what you do now and beef for mac donalds burgers. i've boned beef mostly, but also pigs,sheep,deer and even just missed out on boing some ostrichs. imagine doing the necks on them.

i started on the scales 'weighing the meat' and got stuck there as nobody was faster than me. it suxed... i hated that job. so i stayed behind during breaks apart from a 5 min smoke at tea. didn't take long for the bosses to notice and i was up boning in no time. the extra 200 in the hand a week was a good bonus! did end up getting sacked from that job as some of us would stay up all night drinking, finish off our last drinks in the carpark, do our last day of the week boning... and then back down the pub. some people thought it was dangerous.

don't think i've ever tried Forschner knives and steels. they sound good. you tried those sweebo knives? they got yellow handles with a hard as blade.

that would be illegal to use that in NZ as the MAF would say those rings would hold too many bateria like e-coli. they may not be such a pain in the @ss where you live. nothing worse than being told to wash your gears when your next 1/4 already coming down the chain. not really 😉, i loved it... slash, slash done.
