Out of sheer curiosity, I tried this as Black against chessmaster 10, yet curiously it never plays 2 ..Nxe5. Anyone know why it would choose to not do this?

maybe there are better moves if you just want to go for the better position. Chessmaster doesn't expect mistakes, so therefore chessmaster will probably go for something like 3. Bc4 or something. If it is slightly better, chessmaster will play that, and not think his opponent might do a bad move. Only my thoughts though ....

chessmaster may not play Nxe5 because (for example) 3. d4 has white's position looking good as well

Nxe5 is a great move and no white doesn't win a pawn, only a monstrous development lead if black plays 3. ...Qe7 (which can be better than a single pawn...)
