I saw it but after Qg6 Black is wriggling.
Better to have that f8 Rook (the one in play ) than chase the a8 Rook.
As the game spun out Nxc6 was totally risk free still holding a plus.
If unsure and given the choice then that is good players way.
Black dropped pawns all over the place trying to get his act together
and at no time was White under threat.
But when clear tactcial present themselves, you have to switch hats.
You can imagine the arguments if there was joint analysis.
I'd be all for chucking bits chasing rainbows,
Yash would chase material,
V would play for the ending keeping the pawns intact.
SG would be looking for a problem like finish
Paul Leg would be trying to get a Bishop on g2
And Trev would keeping butting in with suggestions from his cat.

How the heck? this happens to me often.
At move 32, it did look really good for you with the two extra pawns and the bishop pair. And I, like you, would retain the bishop pair if possible and if it made sense. Though, if I did trade a bishop for his knight, I would make sure to retain the same color (as his) to reduce the chance of a drawish position.
I see your point about worrying about his king getting to your queenside pawns, but I still think I would have focused on getting my king into play, such as with 33.Kf8, and used my bishops as necessary (e.g., Bc3 or Bb4 or etc.) to restrain his king and gain a tempo to get an advantage in king position.
And keep bishops back with scope if possible, but also willing to trade my light bishop for his knight if needed to establish a better position for my king.
