I have zero issues that God made every living creature, period, full stop, whether I understand their role in the universe or not.

Why didn't your God create a world without things that kill humans? Why design bacteria that can cause Tuberculosis, Anthrax, Tetanus, Leptospirosis, Pneumonia.
Cholera or Botulism?

What roles could such things have in the universe if humans are the pinnacle of creation?

He made it and when He completed it He called it very good. He put us in charge of it, and gave us one rule, only one.

For one thing: Who was the reporter on the scene at the time of Creation:

And for another thing: Wouldn't that be rather unfair of the Creator of such a vasty Cosmos to put us little sprouts in charge of taking care of all of it, when that really should have been the Creator's responsibility?
