The question I have is, viewing all that, why do not Christians just cut out the OT completely and ONLY go by NT?

If that is the case, wh ...[text shortened]... or NT. We ourselves are figuring out the new moral compass without the need for either OT or NT.
Let's start here:
Do you understand, at all, that the OT contains most of the law for Jews? That it explains what they need to do and how they should eat and pray and live? That these rules were made for Jews of 3500 years ago?
The NT, on the other hand, was written about the Son of God and how we should follow his example.
Which book do you think has more to do with the gentile Christian today? The OT laws are not for us. For Christians today, the OT is a history book, to show us the foundations of our religion. Jesus referred to the OT as 'scripture'; it was well-known as such. But it's simply not about us. Far more important for us is the view we have of one man's life, the innocent Lamb sent by God to die in OUR place for OUR sins.
Yes, this is the 21st Century, and we are faced with a far different set of problems. But we've been shown how to go about these problems. Love God and love each other. Starting from that beginning, we should be able to solve the problems facing us. But no, some do not agree with the premise. Some are only out for themselves. Some have been tragically derailed from what should be our business on this planet.
There need be no "new" moral compass. It's the same as the old moral compass. Love God and love each other. It's really all we need.
