That is where I think you miss the boat completely!
What do we use science for, to seek the truth?

If we had not fallen we would be walking with the One who created all things by the power of His word, holds it all together by the power of His Word. We were made in His image, so our status wouldn't be one of brokenness with selfishness at our core as it is now. We would be in complete communion with our maker and His creation without flaws blinding us to the things right before our eyes, unlike now we see all things as through the glass darkly.

Unlike taking the forbidden fruit we would be in fellowship with God without anything between us. An unspoiled Kingdom made in the outflow of love instead of this heavily influenced demonic world, where we drink in evil and wickedness as if it were nothing we are in now. Without sin death wouldn't be a part of our lives, we would know nothing of pain or sorrow, instead our lives would be filled joy, love, and peace as a common place.

You like ever learning and never coming to knowledge, have at it.

another thing I don't understand
God knew Adam would eat the forbidden fruit being all knowing
so evidently God did not want us in his garden for long anyway
