If, in however many thousand years, we have colonised other planets and the like and some horrid fate befalls the whole of human civilisation, would god save the last pair of humans and redo the Adam and Eve thing, or would he let us die out forever?

God has saved us, just some do not want it, or feel they need it, or
they don't like how God saved them so they set out to do it
themselves.

The question that always pops up for me is: "What is there to be saved
from?" I can't quite get my head around that one.

The last pair of humans would have to pray to God for help. Then it would all depend, I suppose.

Have you ever examined the concept of salvation from a Gnostic viewpoint? Look up Valentinus (Google "Valentinus early Christian writings"😉.
