Any. Lettuce and tomato are obvious, as is onion. Cucumber, sprouts, avocado, raw zucchini, roasted eggplant, shredded carrots, pickles, peppers in any form, sliced olives, fresh basil or cilantro...all good.

I like a veggie sandwich with sliced cucumbers, tomatoes, shredded carrots, avocado, sprouts. Plus one slice of cheddar and one slice of muenster with lemon herb salad dressing on whole wheat bread.

Bread is soft. Most of those vegetables are firm and crunchy. A bad match. Avocado is acceptable on certain types of bread, though.

The secret is in the preparation. Vegetables become pliant and submissive when thinly sliced, shredded or roasted. Then they don't give the bread any problems.
