This case demonstrates what is wrong with the world. While one half starves to death, the other half is throwing away food. Geese are delicious. They taste like duck, or better. If countries have so much that it becomes a pest then that country could make an effort to send it to starving countries. This is like how farmers all over the US dump thousands of live pigs in a hole, and other produce as well when there is a surplus. Although it is difficult to get these to places where there is a need, there is no effort or even the desire to do this.

Yes, they need to be skinned and fat removed before cooking. Or slow roasted with the skin on and the skin gets paper thin as all the fat melts.

There is a theory that animal fat is actually good for you. What is bad is the vegetable fat, like vegetable oils. Some animals especially the ones bred in advanced western countries with loads of hormones and antibiotics are also bad. Orgaicie meat like some ducks. goat and geese would be good. So chicken, pork and beef which ar the major animals eaten and mass produced are not good.

All depends on how much you eat. There is a well established link between meat and cancer.
