How to help a real drunk

Ok here is the story in a nutshell.

In my church we have a homeless ministry where we feed the homeless, offer clothing and supplies, as well as encouragement. We also try to help those we see try to make themselves better. (Please don't ask for a criteria for what makes us feel one deserves more help than another, it's just a feeling thing).
Anyway We have one man who we see can become a member of society again. Not that upstanding rags to riches story, but rather someone who can support himself once more. This would be a success story no matter what anyone would consider success. To get someone off the street and able to support their own is huge!
Here is the problem. He goes on binges. He will get drunk using whatever excuse he can find. he won't stay drunk but for a few days. This is long enough for him to ruin whatever good thing he may have started again. Currently he is doing this again.
Here is what I am looking for. I need ideas on how to stop this behavior, if it can be stopped at all.

I really want valid suggestions please. I know the temptation answers and they really won't help this time.

short of hospitalization or incarceration...

If he does want to stop, can you organise with your church to raise funds to put him in a proper rehabilitation centre for a month? The rehab will help, and the fact that many people care enough to give their money to put him there will definitely help him. After that, you can only pray.

You can't help. You can be there for good times or bad, but we simply cannot choose for others. The poor choices of others are unfortunate; however, we only have control over our poor choices.

You say that you have one man that you think can become a member of society again. The only thing stopping him is his drink problem.What about the rest? Have you completely discounted them because they don't fit into your criteria? How can you dicsriminate?
You either have a bunch of people that you are trying to help fight their demons, and are attempting to rehabilitate, or you have a bunch of peeps with adictions that you don't wnat to help.

I've never seen a drunk getting straight without his own will. and I've tried everything, over and over and over again. it's what you do when you're raised up by one. but you just can't make it happen for someone else, it has to come from inside.

the best you can do is provide an environment to make it possible, compassion and dignity. and keep doing it. most of them won't make it, none of them the first time, but every now and then it does happen.

I doubt many, if any of them, believe they can make it, so that's probably the main problem to address.

Are there any indicators that he is going to go on a binge ahead of time? Are there particular circumstances, environments, etc, that heighten his risk for binging?
