I stick by my choice for the Shawshank Redemption but if I were to pick either GF I or GF II, I think I would have to go with GF II. Vito's story is so interesting.
Blade Runner.
The original 1982 release with the awful voice-over and without the unicorn.
It's the classic example of how a box office flop can turn into a cult classic.
However, as with almost every modern-day cult classic, someone (in this case, not Ridley Scott, the director) had to spoil it by releasing a "director's cut".
When bits are cut from a film, they are cut for a reason.
Usually it's because they don't add anything to the story, regardless of how beautifully they were shot.
You only need to look at the Blade Runner director's cut, or the director's cut of any James Cameron film (I'm thinking Aliens and Terminator 2 here) to see that once a piece of celluloid hits the cutting room floor, it should stay there.
If cyber-punk science fiction is not your cup of tea then watch Cinema Paradiso; it's bloody wonderful.

If I had to choose just one I'd have to choose Pulp Fiction, just so I could have music too. It isn't my favorite movie, but it has the most qualities of most of the movies that I've grown to love, so meh. Wish it had more nudity though, gunna be lonely on that island. 🙁

In that case, I would probably go for Pink Floyd's The Wall. Some brilliant cinematography, the genius of Gerald Scarfe's animations and, of course, some of the best music and lyrics ever written. Plus it's got that nudity you guys wanted 😉
