Make a paste using the following:

Olive oil
cumin (ground)
Corriander (ground)
pepper (black, ground)
garlic
parsley
lemon

Rub paste onto chicken leave for 15 mins

Get the grill hot

Crisp off the chicken skin on the heat, then reduce heat and cook through

Serve with Lime on Crusty Bread.

Nigel Slater is a Kitchen God, not sure who he nicked this recipe off though.

Wash, sprinkle with salt and pepper, cover with lots of hot paprika. Roast, covered at first and basting with juices regularly. Last few minutes, uncover and continue to roast until skin is crisp.

Do you have spuds and vegetables?

Yes. This method is also good with the chicken wrapped in bacon/pancetta.

No spuds tonight but I got some green beans. I like my beans to be citrus-y so I think I'm going to go with rhb's suggestion.

Orange Chicken (very easy)

Slice chicken up into small cubes, dredge in flour. Set aside.

In a pan, saute some chopped onion and garlic. Once fragrant, throw in the chicken cubes and brown them lightly. Remove chicken from pan.

Pour in pan, two cups of orange juice, about half a cup of balsamic vinegar and about a quarter of a teaspoon of crushed red pepper. Bring to a low boil.

Add chicken and allow simmer (covered) for about 30 min. If sauce needs a little thickening, add some cornstarch and water.

Serve over rice.

I'm looking for recipes that will bring out the best of skin and bone. I will not have the time to de-bone and nobody likes chicken without skin. (No, I don't even have one minute of spare time)
