Darvlay's Beef Stew

1. Cube beef chuck and brown very well on high heat.
2. Set beef aside, then add chopped carrots, celery, onion and saute scraping up beef goodness. When tender, add garlic and saute for about a minute.
3. Deglaze hot pan with about a half a bottle of robust red wine and reduce.
4. Add a couple cups of beef broth and whisk in a bit of flour to thicken.
5. Re-add beef to the pot and throw in your herbs/spices (thyme, bay leaves, whatever) and simmer uncovered for about 3 hours. Add more broth/wine if needed. Keep tasting to make sure stew is not bland and awful.

EDIT: Don't cook the dumplings in the pan under pressure!

Stewing steak
Baby onions
Button mushrooms
Diced unsmoked bacon
Garlic
Red wine
Beef stock (or cube & water)
Small tin chopped tomatoes

Sprig of thyme
Bay leaf x2
Salt & freshly ground black pepper

Sage & rosemary dumplings

1)Brown the 2-inch cubed beef & set aside
2)Brown the mushrooms & baby onions & set aside
3)Fry a couple of cloves of chopped garlic in a little butter
4)Add the bacon lardons & fry until crisp
5)Splash in 1/2 bottle of red wine & deglaze the bottom of the pan
Reduce by 50% until the wine becomes slightly syrupy
6)Add the small tin of chopped tomatoes & stock & mix well
7)Put the beef back in, add the thyme & bay leaves & bring to a gentle simmer & put the casserole into the oven on about 130 degrees c for about 1 1/2 hours (or keep on lowest heat, covered on the stove)
Stir every 30 minutes or so to prevent it sticking
8)Add the Mushrooms & baby onions & return to heat/oven for another 30 minutes
9)Make the herb dumplings & place on top of the stew & return to oven/heat for 20-25 minutes

Can't stand beef myself, I can't cook either, but you could always try it with chicken instead, that's quite nice. 🙂

Had my bird soup last week, and a couple weeks earlier. I'd make chili, but my wife doesn't eat that.

Large Can of Baked Beans (or 2 small cans)

2 Pounds of Hamburger or Turkey Burger (or 1 1/2 Pounds is OK)

Package of Chili Powder Mix (in Mexican Isle of Super Market)

Jar of Hot or Mild Picanti or Salsa Sauce
(about same amount of Baked Beans / in Mexican Isle of Super Market)

1 small can of Tomato Paste

1 Large Onion (Big Fat Yellow Onion or a couple small white Onions)

1 Red Pepper (Not a Hot Pepper, unless you dare)

1 Green Pepper

Preparations:

Open can of Baked Beans and strain / rinse well…. Longer the better.
Mix Beans and Salsa and Tomato Paste with some water (1/2 a cup?) in Large Pan big enough to hold ALL Chili.

Chop all veggies in Large Hunks, you don’t need to dice them fine.

Brown Burger in Fry Pan and drain fat off when totally brown.

Put All Veggies in Fry Pan with Brown Meat. Add Chili Powder and pour water (1/2 or 3/4 cups) over mix and stir it up till veggies start to get soft and water is most gone. (A pan cover may help)

Once that is done combine the 2 in the Big Pan. Keep on low heat and stir. Longer the thicker. Add water if you like, it will cook off!

Eat. Makes about 3 days worth of Chili, or have a big Chili party…
