steamed with mashed potatoes and salad, or 'en papillote' with tomato and onion.

My favorite way is to sear it over an open flame then to stuff the trout wih a mixture of crab, shrimp & scallops (all finely chopped) with a light cream sauce poured over the top. Serve it with some fresh grilled aparagus and some fresh steamed spinach cooked with diced pieces of bacon.

*edit* You need to filet the trout first, obviously or you will play hell with all the little fine bones in them. 😉

Cheers mate, I'm having a look how to fillet, I think I will cook the thing hole first in the oven, wrapped in tin foil with butter and cider??

Does that sound a good way??

I am just going with what I have here.

I also have new potatoes and spinach to accompany

Another great way to cook the trout is to filet the fish, stuff it the same way, sprinkle some lemon juice over the top, lay your fresh aparagus around the fish, stick the entire contents into a parchment sack and bake it at abot 350. All of those flavors will permeate each other. When done, place the contents over a bed of dirty rice and you have another winner. 😉
