I have been playing matches on the site for close to a month now. My question is ... "is it rude to forfeit a match you know you are going to lose?" or is recommended to play the entire match you, allowing your opponent check mate you?
I have been in some games where I know it is just a matter of time b/f I lose. Please advise.

Every once in a while I'll resign just because I don't like where the game is going - boring games. I once got so sick of the fact that all my concurrent games were going close enough to the exact same that I resigned all six at once and started again.

I've only once regretted not getting to checkmate my opponent. it was after a great game, him dragging out a forced mate, and resigning 1 move before the mate. right after I especially asked him to let me mate to get the complete game into the pgn. if that's not a flip of the middle finger, I don't know what is. but that's only one case in 158 games I've won.
normally a resigned game is just one off the always too big gameload. but I don't mind if someone really wants to play it to the bitter end. I need to practice my finishing technique anyway, and I know I won't do it unless I'm forced to. but that's only me, most people probably don't like to play until checkmate.

I've only been mated 2 or 3 times... by surprise. I resign when I see the game is lost.
The funny thing is when someone gets upset and calls you a quitter.
"I was going to win, and you quit!"
Um, you did win.
"But I was going to mate you!"
I know, that is why I resigned.

Winning by timeout is a good idea if you can manage it - it shows you think faster than your opponent and you deserve to win.

My point is that if you love chess and playing ... your time is better spent starting a new game or looking over the game you lost, to find where you went wrong, rather than playing out a lost position.
But different strokes ... I am currently playing a game where I have a Q K P against a lone king and he is making me mate him up. Don't mind at all. Each move takes about 5 seconds of my time.
