Firstly, I mean why are chess players so modest about chess? There is of course the rare exception (ie MerchantParkPro), but for the most part, whenever you tell a chess player that they're good or exceptional, they just shrug it off and say something like "Oh, I'm ok, I guess.".
Even the people here never admit to being good. They have no problem demonstrating they're skills in various ways (Only Chess forum threads of all kinds), but when told directly, they don't pay much attention. What's even weirder is that most of the people here are brash, sarcastic, brazen, bold, harsh, crass, rude, and mean, but still, even those people have an extreme amount of modesty about chess.
Is it because deep down they're embarrassed about playing (or more specifically, knowing how to play) this game? Or is it just the easiest way to be somewhat nice and humble?

I guess it's because no matter how good you get, you're still crap compared to some people. there's just no winning with chess, you'll suck no matter how much you work on it. chess is the most ungrateful hobby you can have.

You are seeing false modesty. In truth chessplayers are an arrogant lot. Try criticizing the moves instead of complimenting them. Generally they will defend bad moves, especially if they were made enroute to a win.
The other difference in my mind is that since I know all the people at my club, I know they don't mind if I shoot the breeze during a quick game. I don't know how random people will react to the same thing.
