No, you never asked me about my faith, you tell me about my faith
as you tell me about what I'm thinking about this, that, and the other
thing. You want to know what I believe, ask point blank, and you will
not have to assume, or attempt to read my mind. I don't respond
to your 'thoughts' as you attempt to read my mind, I cannot just
know what it is you want to know unless you make it quite clear! I do
not have the the ability to read minds, nor do I desire to guess what
it is you are trully interested in finding out, unless you tell me strait
up I don't know.

He can do everything that can be done, none can resist Him, or hinder
him when He chooses to act.

I'd say not the way I've seen the word defined. Since God says that
there are things He will forget and not remember any more.

What part of "He cannot deny himself" seems to lend itself to an equivocal stance on whether or not God can deny himself?

Is there even a single translation where it's translated "he doesn't choose to deny himself?" In every translation I find, the statement is that God does not have the ability to do anything counter to his nature.

It's not choice; it's a limitation of agency.
