The main reason for this "bet" was to test Job's loyalty and he passed and was considerably rewarded.... names escape me at the moment but there was also a chap who was told by God to sacrifice his son.... another test of loyalty....and this chap passed....God stopped him just before he struck his son.....
He tests us all the time....and all he wants is loyalty from the people he created !!!

Why would an all powerful God need to test our faith when he can instantly know both our minds and our hearts?

In fact, the story of Job and others like it (both from biblical and modern times) is one of the main reasons I abandoned my faith. I could no longer honestly perform the mental gymnastics required to believe that an omni-everything God can exist in conjunction with evil and human suffering.
I have studied the Bible somewhat extensively, but I do not go looking for instances to "catch theists out"...I figure they have enough problems just keeping all the mythology straight without me showing up to confuse the matter further.
I will say, however, that the extent to which many Christians are ignorant of the theology which comprises their own religion is very aggravating.
