For the same reason people who pick stocks cannot beat the S&P 500. Stock investors think they can beat the market by selecting the right stocks and rarely ever can. Same thing with selecting a primary candidate instead of letting voters decide. The DNC (privately owned corporation) thinks they selected a candidate that can beat Trump and can do better than the American voters can.
Just like the investor that suffers from hubris and thinks he is a selection wizard and cannot beat the S&P 500 the democrats are trusting the DNC to pick a winner in the way Bernie Madoff did. Madoff's selections looked so good until they didn't.

I'm not sure what's wrong with the polls. But my instincts tell me the sampling is going wrong. People have cracked the code, and the answers no longer reflect reality.
