In your "colour" example you ask for an opinion anyway so no argument there.
...but if given certain criteria (most relaxing for whom would be a good start, your question does not state this) it would be possible to ascertain the most relaxing colour, absolutely.
So our opinions need not be the same, but what is true for you is true for me and everyone else.
