Perhaps because it has a bite (in the sense of tang or sharpness) to it.

The best delis are either Italian or Jewish. Plenty of both in Philadelphia, where I was born.

That has been my experience, too.

A reuben has to be done right; I'll take a mediocre grilled ham and cheese over a poor reuben.
