too right, they have become like the sow who was cleaned up and then returned to the mire! they have set a bad example by their conduct and are rightly disfellowshipped! Peter mentions the very fact,

The dog is turned to his own vomit again; and the sow that was washed to her wallowing in the mire. 2 Peter 2:22.

how will you explain that? they are once again touching the unclean thing, Babalyon the great, ouch.

How do you find out if someone is being sexually immoral?
If one does not believe in God and understands he see's all and will bring all to the light, it's hard to explain. Correction: It's hard to get that person to understand...

i don't find out unless they are unrepentant and they are publicly reproved, they might have made a mistake and fessed up and its dealt with in confidence and i will never know.

So how do you know that 'sexual immorality' is the biggest cause of people being disfellowshipped if all matters are dealt in confidence?

So we are at least agreed the practice is scriptural, thank you.
Of course the "practice" may vary from scripture on a case by case basis, but I believe the theoretical basis is Biblical.

That is, if we assume the deciders can err or do mischief in their disposition of a case.

My father was an elder for decades and he said that was the largest issue by far. It's a strong pull for humans.

nope we are under duress to keep our congregations clean from these bad examples of faithlessness. Interesting was the guy I mentioned earlier, he dissociated himself, went to another church for a while, realised it was an empty facade, eventually claimed he was an atheist and has now left his wife and young family, faithless person. we were right to kick his ilk from our congregation, he was, 'not of our sort'.
