But there's simple no plausible reason why the Israelis would knowingly attack a US ship esp. when they admitted to doing so less than an hour and a half later.

Give it up. The Liberty was engaged in intelligence gathering getting information and using methods that were highly classified, so it's not surprising that sailors were not free to discuss all the details publicly. But they have been vocally dealing with the matter for decades.
